Nutrition and Dietetics (M.S.) Competencies

Through didactic coursework and supervised experiential learning (SEL), the Nutrition and Dietetics (M.S.) program at SDSU will provide opportunities for students to accomplish Accreditation Council for Education in Nutrition & Dietetics (ACEND) Graduate Degree Competencies and Performance Indicators at levels of knows(K), shows(S) and does(D). These level of performance indicators are indicated with an () at the end of each performance indicator. An asterisk after a competency number indicates that the competency is an advanced competency. ACEND guidance on all standards and policies to include competencies and performance indicators is available on the ACEND website.

All performance indicators must be covered at least once. Performance indicators may be covered and competencies met in the undergraduate portion of the program or through evaluation of prior learning, however the enhanced competencies identified with and * must be met in the graduate credits portion of the program.

Competencies must be included on syllabi but performance indicators are not required on syllabi. Each competency must be assessed at least once in the program. Performance indicators do not need to be assessed. All performance indicators must be covered in the curriculum. The program chooses performance indicators for assessment.

1.1 Applies an understanding of environmental, molecular factors (e.g., genes, proteins, metabolites) and food in the development and management of disease. (S)
