The Eicholtzs lived on a large farm near Redfield for 36 years. Now they have retired and live in Redfield.
Mrs. Eicholtz raised an average of 500 chickens and 75 turkeys every year. In her community, she is considered an excellent poultry grower.
She canned on the average of 100 quarts of vegetables and 300 quarts of fruit each year. Two hundred quarts of canned meat and 60 quarts of canned poultry also were added to the pantry shelves each year.
The organization meeting of the first home demonstration club in Spink County was held in her home in 1918. Within two years, the county held a county achievement day and has continued this annual event since then. Eicholtz held several offices in her home demonstration club and was elected county president for three consecutive terms beginning in 1923. She now is chairman of the Friendly Neighbors home demonstration club.
Eicholtz was born in 1890, in Marshalltown, Iowa. There she attended elementary and high school. She took teaching training and taught school for seven years. She married Walter Eicholtz, also of Marshalltown, in 1912.
They have two sons. Both were graduated from Redfield high school.
She loves to read, collect poetry, sew and grow new flowers.
The church is an important part of Eicholtz’s life. She was president of the Ladies’ Aid at Athol, helped in Sunday school work, church activities and rural school programs.
Eicholtz has always participated in charity drives, such as Red Cross. She is a member of the Rebecca lodge at Redfield.
